Vegan Pina Colada Coconut Iced Pops

Our Canadian Fall is a magical season filled with a different type of climate every week. There can be a crispness and chill to the air for a few days, and suddenly we’re hit with a balmy 25 degrees the next!

There is no shortage of outdoor adventures to be had in the fall. That includes sitting outside with friends enjoying a light and refreshing snack that brings the sunshine out in all of us.

I tasted Greeniche’s stevia-based Pineapple Pleasure Flavourall, and I felt instantly inspired to combine the flavors of creamy coconut and pineapple… so I put together a dairy-free recipe for vegan pina colada coconut pops! There’s no reason why we can’t still indulge in a summer treat on a sunny fall day. In fact, as a true proud Canadian, I believe that variety in weather, layering clothing, friends, and food come together in perfect harmony. That’s how we roll!

This recipe is filled with the antioxidant vitamin C from pineapple, and the blood pressure lowering Lauric acid from coconut milk.  Coconut milk boosts our electrolytes because coconut boasts a profile rich in minerals. This recipe is simple enough for kids to follow and once you get the hang of it, the flavor possibilities become endless.

Vegan pina colada coconut pop ingredients:

  • 1 can coconut milk
  • 1 teaspoon of Pineapple Pleasure Flavorall
  • 1 Teaspoon Vanilla extract
  • ½ cup shredded coconut
  • 1/2 cup diced pineapple
  • Craft popsicle sticks

Method:

1. In a bowl, mix coconut milk, pineapple Flavorall, vanilla extract, shredded coconut, and diced pineapple. Stir.

2. Pour mixture evenly into popsicle molds, cover with foil and freeze for 30 minutes. Insert popsicle sticks into the bottom of each popsicle.

3. Freeze for 8 hours. Let thaw slightly and remove pops from molds.
