How amazing does guilt-free Gajjar Ka Halwa (carrot dessert) sound?

Here is the full recipe by Shanzah from @cakestudioshanzah who started her baking journey in Dubai and has been baking professionally for the past six years, continuing with her passion and love for baking after moving to Canada. Apart from making customised cakes and pastries, she is an expert in making South Asian and Arabic desserts. 

? Gajjar Ka Halwa ?

INGREDIENTS

  • 1 Litre – Milk
  • 3 cups –  peeled & shredded carrots
  • ½ cup –  Ghee (clarified butter)
  • ½ cup –  Khoya (mawa)
  • 6 drops –  Cardamom Flavorall
  • 1 teaspoon – Maple Flavorall

INSTRUCTIONS

  1. Bring milk to a boil in a pot. Add the shredded carrots and mix. 
  2. Let it boil on high heat for around 10 minutes while stirring regularly. 
  3. Cover the pot with lid and let it cook on low heat for around 1-2 hours till almost all the milk evaporates. Keep stirring and checking in between.  
  4. Once the liquid has almost dried up, add the cardamom and maple flavorall. Mix well
  5. Then add the Ghee and mix well for a couple of minutes on high heat. 
  6. Lastly add the khoya and mix well.
  7. Take off the stove and add nuts (sliced almonds, pistachios or any other of choice) 
  8. Dish out and garnish with edible silver foil leaves and more nuts.
