These immunity-boosting blueberry muffins can be made as sweet as you would like them to be. We chose to use our natural, calorie-free sweetener, Greeniche Stevia Powder for our recipe which is helpful when trying to avoid sugar and artificial sweeteners!

Sugar-free Immunity Boosting Blueberry Muffins
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 2 tbsp baking powder
- 2 tbsp Greeniche Stevia Powder
- ½ tsp. Salt
- 1 tbsp grated orange peel
- 2 eggs
- 1 cup buttermilk
- ¼ cup of vegetable oil
- 1 cup fresh blueberries
- Preheat the oven to 400F and line muffin tin with paper liners.
- Mix flours, baking powder, salt, grated orange peel and Greeniche Stevia Powder in a large mixing bowl.
- Mix in buttermilk, oil and eggs, mix the batter until well combined. Add in the fresh blueberries.
- Spoon batter evenly among 12 muffin cups, each cup should be ¾ full.
- Bake in the oven for 20-25 minutes or until muffins are light golden brown.
- Let muffins cool on a baking rack for 5 minutes.
These muffins are great for little ones and everyone in the family.
