Immunity-Boosting Blueberry Muffins that taste good and are good for you!

It is a great learning experience for the kids to get in the kitchen with you and learn how to bake. Especially when it is a recipe to boost your immunity to boot! Eating more immunity-boosting foods at this time is an easy addition to our diets. A nutritious diet is important, but so is making sure you are having enough sleep, staying active, hydrating properly and most importantly, managing stress levels.

Immunity Boosting Muffins

These immunity-boosting blueberry muffins can be made as sweet as you would like them to be. We chose to use our natural, calorie-free sweetener, Greeniche Stevia Powder for our recipe which is helpful when trying to avoid sugar and artificial sweeteners!

Greeniche Stevia Powder

Greeniche Stevia Powder is a Stevia is extracted from the Stevia Rebaudiana herb with new technology that can isolate the Reb-A sweet component and eliminate the bitter component, Reb-B. One of the major benefits of this product is it does not intensify sugar cravings like other commercial sweeteners. Fresh Immunity Boosting Blueberries

Blueberries contain flavonoids, which are a type of antioxidant that can help reduce damage to cells and boost your immune system. You can use fresh, frozen or dried blueberries as they are all equally beneficial and cooking them won’t affect the amount or quality of their antioxidants. Blueberries are also known to have plenty of vitamins, including vitamin A, potassium, dietary fibre, vitamin C and manganese. These muffins also contain vitamin C rich orange peel which helps to boost your immune system and also contains anti-inflammatory properties.

Sugar-free Immunity Boosting Blueberry Muffins

INGREDIENTS

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 2 tbsp baking powder
  • 2 tbsp Greeniche Stevia Powder
  • ½ tsp. Salt
  • 1 tbsp grated orange peel
  • 2 eggs
  • 1 cup buttermilk
  • ¼ cup of vegetable oil
  • 1 cup fresh blueberries

INSTRUCTIONS

  1. Preheat the oven to 400F and line muffin tin with paper liners.
  2. Mix flours, baking powder, salt, grated orange peel and Greeniche Stevia Powder in a large mixing bowl.
  3. Mix in buttermilk, oil and eggs, mix the batter until well combined. Add in the fresh blueberries.
  4. Spoon batter evenly among 12 muffin cups, each cup should be ¾ full.
  5. Bake in the oven for 20-25 minutes or until muffins are light golden brown. 
  6. Let muffins cool on a baking rack for 5 minutes.
