Immunity-Boosting Blueberry Muffins that taste good and are good for you!

Eating more immunity-boosting foods at this time is an easy addition to our diets. A nutritious diet is important, but so is making sure you are having enough sleep, staying active, hydrating properly and most importantly, managing stress levels.

Immunity Boosting Muffins

These immunity-boosting blueberry muffins can be made as sweet as you would like them to be. We chose to use our natural, calorie-free sweetener, Greeniche Stevia Powder for our recipe which is helpful when trying to avoid sugar and artificial sweeteners!

Greeniche Stevia Powder

These muffins also contain vitamin C rich orange peel which helps to boost your immune system and also contains anti-inflammatory properties.

Sugar-free Immunity Boosting Blueberry Muffins


  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 2 tbsp baking powder
  • 2 tbsp Greeniche Stevia Powder
  • ½ tsp. Salt
  • 1 tbsp grated orange peel
  • 2 eggs
  • 1 cup buttermilk
  • ¼ cup of vegetable oil
  • 1 cup fresh blueberries


  1. Preheat the oven to 400F and line muffin tin with paper liners.
  2. Mix flours, baking powder, salt, grated orange peel and Greeniche Stevia Powder in a large mixing bowl.
  3. Mix in buttermilk, oil and eggs, mix the batter until well combined. Add in the fresh blueberries.
  4. Spoon batter evenly among 12 muffin cups, each cup should be ¾ full.
  5. Bake in the oven for 20-25 minutes or until muffins are light golden brown. 
  6. Let muffins cool on a baking rack for 5 minutes.
